When I was a kid I loved the croissant breakfast sandwiches at Dunkin Donuts. This is my (healthier) ode to that New England treat from my childhood.
The Popover is an American pastry. It doesn't hold for days on end, so it nearly went extinct as our food became industrialized. I grew up with Popovers as an occasional treat my Dad would make. At Clover we sift the flour (King Arthur), crack super-fresh eggs (Maine Family Farms), and measure our the milk (Mapleline Farm, Hadley) and bake these in small batches throughout the morning.
We fill it with organic tomatoes (Longwind Farm, VT), fried leeks, Grafton Cheddar Cheese (made Kosher for us!), smokey tempeh from Light Life (Turners Falls, MA), and a bit of Just mayo.
